Where to find it

Frozen things do not travel well and they do not wait well, so we are only in rooms we can reach and restock. Below is every one of them, what is in that particular freezer, and the day it was last filled — so a wasted journey is our fault rather than yours.

When each room is filled

Useful if you are planning a trip, and useful if you are thinking of becoming a stockist. Cut-offs are firm — the churn does not care that an order came in an hour late.

How to tell it is fresh

The date is on the lid

Every cup and tub carries a churn date pressed into the base of the lid, not a best-before eighteen months out. Anything more than three weeks old should not be on a counter, and if you find one we would like the date.

Frost is a bad sign

A crust of ice crystals on the surface means the freezer has cycled warm and refrozen. It is safe and it will eat gritty. Tell the room — most of them will swap it without an argument, because they would rather know.

Ours is soft at −14°C

No stabilisers means it scoops at a warmer temperature than the industrial stuff beside it. If it comes out of the freezer rock solid, it has been stored too cold and needs five minutes before it tastes of anything.

Nobody scoops from a tub

We do not sell open-tub service. If you are handed a scoop from a bulk pan with our name on it, it is not ours — the litre tubs go home sealed, and the only thing served open is sorbet in a restaurant kitchen.

Twentieth room

If you want to carry it

We take on two or three rooms a year and we are slow about it, because every new one is another stop on a van that is already full. The first question we ask is never about volume — it is what your freezer holds and how often the door is opened.

The minimum first order is two cases, which is about ninety units, and we would rather you started there and reordered than took six and let them sit. Anything unsold in the first eight weeks comes back and we credit it in full.

What we ask for in return is the price stays ours, the date stamp stays visible, and nobody scoops from a tub. That is the whole agreement, and it fits on one page.
